Ingredients

For the steak:
  • 5 oz. bison steak (sirloin or ribeye is ideal)
  • 1 tsp ghee or grass-fed tallow
  • Sea salt + cracked pepper
  • Optional: garlic powder, rosemary, or smoked paprika
For the zucchini:
  • 1 medium zucchini, sliced into half-moons
  • 1 tsp olive oil or ghee
  • Sea salt + dried Italian herbs (oregano, basil, thyme)

Instructions

  1. Prep the steak:
  2. Pat the bison steak dry and season generously with salt, pepper, and optional spices.
  3. Heat ghee in a skillet over medium-high heat.
  4. Sear steak 3–4 minutes per side (depending on thickness) for medium-rare. Let rest 3–5 minutes before slicing.
  5. Sauté the zucchini:
  6. While the steak rests, heat olive oil or ghee in the same pan.
