Ground Chicken Sweet Potato Skillet

Let me just say—this recipe is a weeknight lifesaver. It’s cozy, filling, super flavorful, and all comes together in one cast iron skillet. That’s right: less cleanup, more deliciousness. 🙌🏼

I created this on one of those “what do I have in the fridge” kind of nights, and now it’s in my regular rotation. Think sweet potatoes, ground chicken, warm spices, and just a touch of melty dairy-free cheese. It’s hearty, it’s healthy, and it leaves you feeling amazing (not sluggish).

This one’s all about trusting your taste buds—I rarely measure spices, and you don’t need to either. Let your intuition lead. 🧡

🛒 Ingredients:

  • 2 large sweet potatoes, peeled & diced

  • 1 lb. pasture-raised ground chicken

  • 1 red bell pepper, chopped

  • 1 small onion, diced

  • 1/4–1/2 cup dairy-free shredded cheese (totally optional—but delicious!)

  • 1/4 cup water

  • 2 tbsp. olive oil

  • Dash of coconut aminos (I love Bragg’s)

  • Seasonings: basil, oregano, parsley, minced onion, Old Bay, turmeric, black pepper, salt

    (I don’t measure, I feel it out—roughly 1 tsp each if you need a ballpark)

🔥 How to Make It:

  1. Sauté the onion:
    In a cast iron skillet, heat olive oil over medium. Toss in your diced onion and a little black pepper. Sauté for about 5 minutes until soft and fragrant.

  2. Build the flavor:
    Add minced garlic and sauté for another 2 minutes. Then throw in your chopped red bell pepper and a good dash of coconut aminos. Let that cook for about 3 minutes.

  3. Cook the chicken:
    Add your ground chicken to the skillet and break it up with a wooden spoon. Let it cook for 5–10 minutes, until it’s no longer pink.

  4. Add the sweet potatoes:
    Once the chicken is cooked, add in your diced sweet potatoes and 1/4 cup of water. Stir well, cover loosely (or not), and let it simmer until those sweet potatoes are fork-tender.

    (Timing totally depends on your stove—trust the process!)

  5. Cheesy finish:
    When everything’s cooked and smelling amazing, remove from heat and sprinkle on your dairy-free cheese. Let it melt a little, stir if you want, and boom—dinner is served.

  • Want it a little spicy? Add crushed red pepper or paprika.

  • Add spinach or kale in the last few minutes for a green boost.

  • This makes amazing leftovers—just reheat and enjoy.
